Vietnamese gỏi cuốn are one of those funny foods that go by all sorts of names in English. I’ve seen them called Summer rolls, fresh Spring rolls, and salad rolls. I’ve always known them as salad rolls so that’s what I’m going with. Whatever you like calling them, they are pure handheld genius, especially when you start stuffing them with things that don’t traditionally go inside rice paper.
Case in point: that crispy, breaded, juicy pork known as tonkatsu. Tonkatsu is incredible no matter how you eat it (it’s especially awesome when you tuck it in between two slices of bread). So really, it wasn’t too much of a stretch when I decided that tonkatsu rolled in rice paper would make for a strangely delicious hybrid salad roll. I loved the contrast between the juicy panko crusted pork, crunchy cucumbers and slippery rice paper. I preferred mine with a bit of mustard, but Mike liked dipping his in a bit of fish sauce. Either way, these guys are definitely going to be eaten again soon!
Tonkatsu Salad Roll Recipe
makes about 12 rolls
- 2 small pork chops, cut into even strips
- salt and freshly ground pepper
- 2 tablespoons flour
- 1 egg, lightly beaten
- 1 – 1/2 cups panko
- oil for pan frying
- 2-3 cups raw spinach
- 1 english cucumber, seeded and cut into strips
- 12 round rice paper wrappers
- mustard, to taste
- fish sauce vinaigrette, if desired
Lightly season the pork chop strips with salt and pepper and sprinkle with flour. Dip the chops into the beaten egg and then into the panko, making sure that all sides are coated. Heat up half an inch of oil in a large frying pan over medium high heat. Fry the chops until golden brown and cooked through, flipping once, about 2 minutes per side. Drain on paper towels.
Take a rice paper wrapper and completely submerge it in a bowl of hot tap water for 10-15 seconds. Place the wrapper on a plate or cutting board – it’ll continue to soften as your assembling your roll. Add fillings as desired: spinach, cucumber strips, crispy pork. Fold the bottom half of the wrapper up over the filling, hold the fold in place, fold in the sides and roll. Enjoy with mustard and fish sauce. Repeat as needed.

Rafflecopter doesn’t seem to be working – consider yourself entered

I have a Shun knife and totally love it….winning this would be fabulous! Just ordered a copy of your cookbook – can’t wait!
Happy Birhtday!!!!
My favorite birthday dinner is definitely Monhinga. It is a traditional Burmese fish soup. I have recently become a big fan of yours.
Happy Birthday
Chirashi!
This is sinful but healthy and great idea(the crispy pork). I will try this but with my leftover tapioca sheets.
Happy birthday internet friend!
As for me, I think my favorite birthday meal would have to be tangsuyuk, a Korean dish of crispy fried beef and sweet and sour sauce, obviously served with white rice and kimchi. As a kid it’s what I would ask for every year, and it holds a lot of good memories for me.
I hope your birthday memories are just as sweet! And sour. And crispy and beefy.
thank you for sharing of you creation .:)
Happy birthday!
I would love to have a feast at an izakaya!
With some cod roe, beer and sake… :-)
A big fat juice steak with all the trimmings is what I get during my birthdays.
Anyways, Happy Birthday!!
I’m not a US resident but this does not keep me from wishing you a HAPPY BIRTHDAY from Denmark..
Your blog ROCKS!
I just discovered your blog today. I’m in love with this recipe and this blog. Keep up the awesome work!
Stephanie,
You make this stuff look so easy. Happy belated birthday! A great birthday meal for me would be a nice bowl of pasta (white sauce please) and a glass of my favorite wine.
Love love chicken marsala!
a fancy fish dinner! and something chocolatey for dessert
Happy Birthday!
My favorite birthday meal is eggplant tomato salad, then turkish eggplant and lamb, and if an eggplant birthday cake was possible– that!
I like to class it up with a table full of Chinese takeout food (enough for a week of celebratory leftovers) like in Gilmore Girls.
Happy birthday! I love your blog. My favorite birthday meal would be steak and shrimp. With a side of cheesecake.
Sushi! This tonkatsu makes me want it now.
Happy birthday!
For the past five years i have ordered pepe’s tomato pie from new haven for my birthday. Always with a chocolate cake dessert. This year I am no longer in New haven, so will have to find something else!
Happy birthday, fellow Virgo! I think my ultimate birthday meal is one of the traditional splurges (steak, sushi, etc.) and then some cake and ice cream.
I’m not very original or fancy with it comes to birthday food. I like a chicken breast coated in cheesy Doritos with salsa and cheese on top. That’s what I usually ask for when I get to choose. :)
Happy Birthday !!!
This looks so delicious and easy. I will have to try it soon
Ultimate Birthday Meal will have to butterscotch milkshake – not really a meal, but I make it every year on my birthday and the day is not complete without it. It is insanely rich so I limit it to just once (or twice) a year.
Happy birthday! I’d say my birthday meal would be steak frites with a side of equally indulgent dessert- tiramisu, or cheesecake, or a brownie sundae :-)
my ultimate birthday meal would definitely be Asian, probably starting with Som Tom, maybe bahn mí to follow, and taro ice cream for good measure.
Happy Birthday! My birthday meal – enormous pot of moules frites (extra crispy please).
Happy Belated Birthday! My favorite birthday dinner would have to be multiple courses of Yakitori. I’m not a big fan of the sweet stuff, so I would have to say for dessert, more grilled goodness.
I love having a big sushi dinner for birthday dinners!
My ultimate birthday meal is at my favorite restaurant, The Pearl, in Peterborough, NH. Salad rolls, oysters, lemongrass chicken, and Pain Perdu for dessert! And lots of wine, of course.
Happy Birthday!!!!
A very Happy Birthday to you!! What’s your ultimate Birthday meal???
Haha… growing up my B-day meal was always Banquet chicken (the fried chicken found in the frozen section of the grocery store). Who knows why?!? I just loved it. After having legit good food, I don’t think I can go back. My ultimate B-day meals runs the gamut, but I think the key is fatty/indulgent while still being low key or fun in some way: sushi, lobster mac & cheese, world’s best mac & cheese (Beecher’s flagship cheddar), or even some Fake Shake made with home ground short rib, chuck and sirloin. I have to start thinking now for my big day in December.
Happy birthday!!!
Just wanted to say that I checked out your blog after Jessica mentioned it and I can’t WAIT to get my copy of your book!
My favorite birthday meal is sushi or tapas with lots of friends and there must be cake! Mandatory carrot cake with extra raisins!

Happy Happy Birthday!!! My favorite birthday meal would most definitely be a Asian feast. Sushi and noodles!!! mmmmm
Definitely some pot roast! Yum!
Happy Birthday!
I’m pretty sure my favorite birthday meal would be one I wouldn’t make at home. Bibimbap or some other intricate Korean dish.
Ramen!!
Happy birthday! My ultimate birthday dinner was my 10th – the first time I’d ever encountered mac n cheese out of a box. Sacrilege, I know, but something about that fluorescent orange was just the most amazing moment ever.
Happy birthday to you! My ultimate birthday meal would be spicy mussels in broth, good bread, great salad, and cherry pie for dessert.

All my favs!
My ultimate birthday meal definitely has to include some great drinks- fancy cocktails or nice wine. Not exactly a meal, but important nonetheless :)
Ultimate birthday meal would be any hard-to-reserve restaurant with good friends and good drinks. Of course, the food has to be good, but I also prefer having a memorable night.
Definitely comfort food…a hot bowl of pho!
My family and friends also go out for Ethiopian food for my birthday so it is my ultimate birthday meals. I love that we can order a huge variety of dishes to share and everyone is always happy. The flavors never cease to please.
Also – I LOVE making summer rolls (we call them spring rolls or Vietnamese rolls in my house) and my favorite filling is Spicy Coconut Tofu Strips by Tofu-Yu (a bay area based company). These strips are a bit crunchy and have a great flavor for a veggie roll. I would love to figure out how to make them myself.
Looking forward to buying your book!
My favorite birthday dinner is Homemade Turkey Meatloaf meatballs.
They are tasty and just the right size :)
Happy birthday!

SUSHI!
Happy birthday! and congrats on your book!
My favorite birthday dinner is sushi!
My birthday is on Monday – yay for virgos who love to cook! Woot woot!
My ideal birthday meal would be a combination of decadent assortment of yummalicious crispy fried things (Lumpia, chicken wings, calamari, tempura, etc) with perfectly made white rice (because it neutralizes all fried components – wink wink!) plus a gorgeous end of summer tomato salad (the acid also “neutralizes” the fried factor) and an assortment of melty cheesy carby goodness (grilled cheese, mini mac & cheese, state bird provisions burata garlic knots). Then add a fabulous summer salad with fresh figs, goat cheese, pears and freshly picked salad greens with a tart cleanse your palate dressing to prepare you for dessert! Dessert would be an assortment of magical decadent items that I could sample to my hearts content – butterscotch pudding, salty dark chocolate caramel silky baked treat, cheesecake with fresh berries and peanut butter decadence that knocks my socks off. And a perfect cup of coffee or espresso with dessert to kick in some caffeine so I don’t pass out with bliss.
Happy birthday!
My ultimate birthday meal is probably some super cheese pasta and lots of champagne!
I thought this is why we have birthday weeks… so we don’t have to chose ONE birthday meal?! I’ll take anything spicy and carby with lots of alcohol and chocolate cake.

I love you for this!! So so good-sounding!
Last year, my mother made my dream-dinner for my birthday (mine is the 15th!): smoked ribs, creamed corn, and her ultra-special potato salad, with my favorite meringue dessert in place of cake! Happy Brithday Stephanie!!!
My favorite birthday meal is hands down something that my Mom would cook…niku jaga (meat and potato) with of course gohan (rice). Since my Mom has dementia she no longer can make this for me or my family but I’ve continued to create it for everyone. And from what my brothers tell me I have successfully captured the same aji (taste) as my Mom’s. Gotta be grateful that she has passed down this along with many other yummy Japanese home-style cooking to us kids.
