Do you ever have those days where you just want to lie in bed and do nothing? When you finally get out of bed everything seems grey and gloomy and you ask yourself, why did I even bother? Yeah, currently having one of those days and trying to get myself out of a funk. I’ve even had two coffees, which usually perks me right up. One was a hot chocolate with an espresso shot in it and not even that helped.
I hate to be depressing because well, no one likes depressing people so instead I’m going to leave you with these mini pizza cookies. They’re essentially mini mini pizzas, which I’m obsessed with. Mini things never fail to make me happy so I’m going to go whip up a batch. I have a tube of pizza dough in the fridge for emergencies like this – no one’s judging cause in times of need sometimes you just have to use store bought dough and sauce. It’s time to break out the emergency pizza dough guys. I’m gonna have extra cheese.
Mini Pizza Cookie Recipe
makes 12-16
- 1 tube pizza dough (or you know, make some no-knead dough)
- pizza sauce
- shredded mozzarella
- pepperoni
Preheat your oven to 400°F.
Roll out your dough and use a 2 inch round cookie cutter to cut out rounds. Top with sauce, shredded mozzarella and pepperoni.
Bake for 12 to 15 minutes, keeping an eye on the pizzas, until the cheese is melted and the crust is golden brown and crispy. Remove from the oven, let cool, stuff your face and eat away your emotions.
Poo. :( Days like those are no fun (and I feel like they are peskier and more frequent than ever as we do more of this thing called “being a grown-up”?!) but if anything can cure them, I think mini pizza cookies have to be the thing. (Especially anything with that percentage of pepperoni coverage!) They look amazing and so genius, like everything you do! Sending you lots of hugs and mini pizza vibes, Steph!
Oh man… these seem like the perfect solution to a case of the Meh’s. That’s what we call it in our house when we feel like that. “How you doing, hon?” “I just gotta case of the Mehs, ya know?”

I hope the pizza cookies helped – they definitely look good! My go-to for that kind of day is pancakes. My roommate even asks what’s wrong if she sees me eating them, and they help 75% of the time. So my heart goes out to you as I stand here mixing pancake batter. Maybe I’ll make these cookies next time.
Those toppings are good on a sourdough English muffin also; for a time saver.

Personally I go dough, cheese, sauce, pepperoni. Just might be too small and tasty. Will have to make a whole mess of them for sure. Kids are vultures! LOL

Ok “pizza cookie” definitely caught my attention. Brilliant, it’s basically just mini mini mini personal pizzas but something about the fact that it’s so tiny just makes me smile. And you could eat a handful of them guilt free! I’m saving this to do with my nephews they are going to love it.
