Sometimes I get random cravings for french toast in the middle of the afternoon. French toast for one to the rescue! It feels like french toast should be a big batch kind of thing, with multiple eggs and entire loaves of bread, but here’s how to make french toast for one with just one egg and two slices of toast.

The key to making good french toast is the bread – aim for a heartier bread that’s going to be able to soak up all of your egg mixture without falling apart. I like using slices from a french loaf (heehee french bread for french toast), the kind that looks like a giant baguette. If your bread is older and kind of dried out, it’s even better because it’ll soak up more custard and give you a creamier french toast.

The other key is cooking on medium heat. If you cook your french toast on high, you’ll end up cooking the outside of the bread, but the inside will still be soggy and raw. Take your time with it on medium to medium low heat and aim for a golden brown crust with a creamy, custard-y cooked inside.

serves 1

  • 1 egg
  • 2 tablespoons milk
  • 2 teaspoons sugar, or to taste
  • 2 slices bread of choice
  • oil or butter for the pan

In a shallow bowl (big enough for your bread to sit on the bottom of), whisk the egg, milk, and sugar. Dip the bread into the egg mixture and let soak, flipping once.

Heat up a bit of butter or oil in a non-stick pan over medium heat. Cook the dipped bread until golden, flipping once. Enjoy with syrup or powdered sugar.
